Ipak, to u praksi ne izgleda potpuno isto u klanici, mlekari, pekari, pogonu za preradu ribe, ili u proizvodnji gotovih jela.<\/p>\n\n\n\n<p>Razlog je jednostavan: razli\u010diti proizvodi nose razli\u010dite rizike. Negde su najve\u0107i izazovi vlaga i niska temperatura. U nekim pogonima su to alergeni u prahu. Negde krv, masno\u0107a i organski ostaci. Ponegde i bakterija &#8211; listerija &#8211; u zonama gotovog proizvoda. \u010ceste promene zaposlenih, sezonski rad ili vi\u0161e proizvodnih linija u istom objektu mogu biti izvori rizika.<\/p>\n\n\n\n<p>Zato izbor radne ode\u0107e ne sme da bude samo pitanje veli\u010dine, boje i koli\u010dine. U pogonu za obradu mesa radna ode\u0107a mora da odgovori na vla\u017eno okru\u017eenje, mrlje, biolo\u0161ke rizike i potrebu za \u010destim pranjem. U mlekari mora da podr\u017ei rad u hladnom lancu, vla\u017enim prostorima i zonama u kojima se rukuje proizvodom koji je osetljiv na mikrobiolo\u0161ki rast. U pekari poseban izazov mogu biti bra\u0161no, pra\u0161kasti sastojci i alergeni. U preradi ribe va\u017eni su hladno\u0107a, vlaga, mirisi, klizave povr\u0161ine i rizici specifi\u010dni za riblje proizvode. U proizvodnji gotovih jela \u010desto je najva\u017enije strogo razdvajanje sirovih, termi\u010dki obra\u0111enih i RTE (<em>ready-to-eat<\/em>) zona.<\/p>\n\n\n\n<p>Treba napomenuti i to da Evropska komisija navodi da za proizvode \u017eivotinjskog porekla, uklju\u010duju\u0107i ribu, mleko i mle\u010dne proizvode, jaja i meso, <a href=\"https:\/\/food.ec.europa.eu\/food-safety\/campaign-2026\/hygiene_en\" target=\"_blank\" rel=\"noreferrer noopener\">va\u017ee stro\u017ea higijenska pravila<\/a> zbog vi\u0161eg rizika.<\/p>\n\n\n\n<p>Zato svaka kompanija treba da postavi isto po\u010detno pitanje: koji rizici postoje u na\u0161em konkretnom procesu i kako radna ode\u0107a mo\u017ee da pomogne u njihovoj kontroli?<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"meso\">Radna ode\u0107a u industriji mesa<\/h2>\n\n\n\n<p>Industrija mesa spada u sektore sa visokim higijenskim zahtevima. <a href=\"https:\/\/www.fao.org\/input\/download\/standards\/10196\/CXP_058e.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">Kodeks higijenske prakse za meso<\/a> navodi da je meso tradicionalno posmatrano kao zna\u010dajan prenosilac bolesti koje se prenose hranom, uz primere patogena kao \u0161to su E\u0161erihija koli O157, Salmonela, Kampilobakterija i Jersinija enterokolitika.<\/p>\n\n\n\n<p>U praksi, to zna\u010di da radna ode\u0107a u mesnoj industriji mora da odgovori na vi\u0161e izazova odjednom: kontakt sa sirovinom \u017eivotinjskog porekla, vla\u017ene procese, vidljive mrlje, masno\u0107u, krv, hladne prostorije, pranje i dezinfekciju, kao i odvajanje zona u kojima se rukuje sirovim mesom od zona u kojima se proizvodi dalje obra\u0111uju, pakuju ili pripremaju za konzumaciju.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/d2ris6qfzcz0wn.cloudfront.net\/wp-content\/uploads\/sites\/18\/2026\/06\/Lindstrom_Atria-24-1024x683.jpg\" alt=\"\" class=\"wp-image-20402\" srcset=\"https:\/\/d2ris6qfzcz0wn.cloudfront.net\/wp-content\/uploads\/sites\/18\/2026\/06\/Lindstrom_Atria-24-1024x683.jpg 1024w, https:\/\/d2ris6qfzcz0wn.cloudfront.net\/wp-content\/uploads\/sites\/18\/2026\/06\/Lindstrom_Atria-24-300x200.jpg 300w, https:\/\/d2ris6qfzcz0wn.cloudfront.net\/wp-content\/uploads\/sites\/18\/2026\/06\/Lindstrom_Atria-24-768x512.jpg 768w, https:\/\/d2ris6qfzcz0wn.cloudfront.net\/wp-content\/uploads\/sites\/18\/2026\/06\/Lindstrom_Atria-24.jpg 1500w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>Za mesnu industriju posebno su va\u017eni:<\/p>\n\n\n\n<ul class=\"wp-block-list has-white-color has-turquoise-background-color has-text-color has-background has-link-color wp-elements-b013d56bab2515013646bfa3006e3b26\">\n<li>radna ode\u0107a koja se lako \u010disti i ne zadr\u017eava kontaminente<\/li>\n\n\n\n<li>ode\u0107a bez elemenata koji mogu postati fizi\u010dka opasnost, kao \u0161to su labava dugmad ili o\u0161te\u0107eni delovi<\/li>\n\n\n\n<li>vodootporne ili za\u0161titne kecelje tamo gde postoji prskanje<\/li>\n\n\n\n<li>za\u0161titni narukavi i rukavice kada proces to zahteva<\/li>\n\n\n\n<li>obu\u0107a koja je pogodna za vla\u017ene i klizave povr\u0161ine<\/li>\n\n\n\n<li>termi\u010dki odgovaraju\u0107i slojevi za rad u hladnja\u010dama<\/li>\n\n\n\n<li>jasno razdvajanje ode\u0107e za sirove i \u010distije zone<\/li>\n<\/ul>\n\n\n\n<p>U mesnoj industriji posebno je va\u017eno kontrolisati prelazak zaposlenih izme\u0111u zona. U gorepomenutom Kodeksu navodi se da osobe koje prelaze iz prostorija sa sirovim mesom u prostorije za pripremu ili proizvodnju mesnih proizvoda, posebno kuvanih proizvoda, treba da operu, promene i\/ili dezinfikuju za\u0161titnu ode\u0107u kada je to potrebno, kako bi se mogu\u0107nost unakrsne kontaminacije svela na najni\u017ei prakti\u010dno mogu\u0107i nivo.<\/p>\n\n\n\n<p>Drugim re\u010dima, uniforma koja je no\u0161ena u zoni sirovog mesa ne treba da bude automatski prihvatljiva i u zonama kuvanog, se\u010denog ili pakovanog proizvoda. Moraju se definisati jasna pravila : ko sme da prelazi, pod kojim uslovima, gde se presvla\u010di i kako se evidentira zamena ode\u0107e.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/d2ris6qfzcz0wn.cloudfront.net\/wp-content\/uploads\/sites\/18\/2026\/06\/Food-industry-159312934_l-1-1024x683.jpg\" alt=\"\" class=\"wp-image-20407\" srcset=\"https:\/\/d2ris6qfzcz0wn.cloudfront.net\/wp-content\/uploads\/sites\/18\/2026\/06\/Food-industry-159312934_l-1-1024x683.jpg 1024w, https:\/\/d2ris6qfzcz0wn.cloudfront.net\/wp-content\/uploads\/sites\/18\/2026\/06\/Food-industry-159312934_l-1-300x200.jpg 300w, https:\/\/d2ris6qfzcz0wn.cloudfront.net\/wp-content\/uploads\/sites\/18\/2026\/06\/Food-industry-159312934_l-1-768x513.jpg 768w, https:\/\/d2ris6qfzcz0wn.cloudfront.net\/wp-content\/uploads\/sites\/18\/2026\/06\/Food-industry-159312934_l-1.jpg 1500w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"mleko\">Radna ode\u0107a u mlekarskoj industriji<\/h2>\n\n\n\n<p>Mleko i mle\u010dni proizvodi imaju svoje specifi\u010dnosti. <a href=\"https:\/\/www.fao.org\/input\/download\/standards\/10087\/CXP_057e.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">Kodeks higijenske prakse za mleko i mle\u010dne proizvode<\/a> navodi da mleko i mle\u010dni proizvodi mogu izazvati bolesti koje se prenose hranom, kao i da \u017eivotinje za mu\u017eu mogu nositi patogene koji mogu dospeti u mleko.<\/p>\n\n\n\n<p>U mlekarskim pogonima radna ode\u0107a treba da podr\u017ei kontrolu higijene u procesu koji \u010desto uklju\u010duje vlagu, niske temperature, \u010di\u0161\u0107enje, dezinfekciju, rad sa cevovodima, tankovima, punilicama, fermentisanim proizvodima i ambala\u017eom. Pored toga, mleko je i alergen, pa u pogonima koji proizvode i druge kategorije hrane treba voditi ra\u010duna o unakrsnom kontaktu alergena.<\/p>\n\n\n\n<p>Za mlekarsku industriju su posebno va\u017eni:<\/p>\n\n\n\n<ul class=\"wp-block-list has-white-color has-turquoise-background-color has-text-color has-background has-link-color wp-elements-208c527b5b306ef5fa613819e9057082\">\n<li>ode\u0107a koja je pogodna za vla\u017ene uslove i \u010desto pranje<\/li>\n\n\n\n<li>\u010dista i lako uo\u010dljiva uniforma za proizvodne i punioni\u010dke zone<\/li>\n\n\n\n<li>za\u0161titna obu\u0107a koja mo\u017ee da izdr\u017ei mokre podove i sredstva za \u010di\u0161\u0107enje<\/li>\n\n\n\n<li>dodatni slojevi za rad u hladnim prostorima<\/li>\n\n\n\n<li>za\u0161titne kecelje ili mantili u zonama gde postoji prskanje<\/li>\n\n\n\n<li>jasna pravila za odvajanje sirovog mleka, pasterizovanog proizvoda i zone punjenja<\/li>\n\n\n\n<li>kontrolisano skladi\u0161tenje \u010diste ode\u0107e do upotrebe<\/li>\n<\/ul>\n\n\n\n<p>Kod mleka i mle\u010dnih proizvoda posebno je va\u017eno povezati radnu ode\u0107u sa kontrolom vremena i temperature. Kodeks navodi da se mle\u010dni proizvodi od proizvodnje do gotovog proizvoda moraju \u010duvati na odgovaraju\u0107im temperaturama i u odgovaraju\u0107em vremenu, kako bi se minimizovao razvoj opasnosti po bezbednost hrane.<\/p>\n\n\n\n<p>Radna ode\u0107a tu nije zamena za tehnolo\u0161ku kontrolu, ali jeste deo higijenskog okru\u017eenja. Ako se ista ode\u0107a koristi u zonama sirovog i termi\u010dki obra\u0111enog proizvoda bez jasnih pravila, pove\u0107ava se rizik od unakrsne kontaminacije. Me\u0111utim, to ne zna\u010di da su zahtevi za radnu ode\u0107u ovde jednostavni.<\/p>\n\n\n\n<p>Glavni izazovi u pekarama i konditorskim pogonima \u010desto su pra\u0161kaste sirovine, bra\u0161no, dekoracije, \u010dokolada, kreme, jaja, mleko, ora\u0161asti plodovi, susam i drugi alergeni. Kod suvih i pra\u0161kastih sastojaka problem nije samo kontakt sa proizvodom, ve\u0107 i prenos \u010destica kroz vazduh, preko opreme, povr\u0161ina, ruku, rukavica i ode\u0107e.<\/p>\n\n\n\n<p><a href=\"https:\/\/www.fao.org\/fao-who-codexalimentarius\/sh-proxy\/ro\/?lnk=1&amp;url=https%253A%252F%252Fworkspace.fao.org%252Fsites%252Fcodex%252FStandards%252FCXC%2B80-2020%252FCXC_080e.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">Smernice za upravljanje alergenima<\/a> Kodeks alimentarijusa posebno nagla\u0161avaju da dizajn procesa, kretanje osoblja i ventilacija treba da spre\u010de ili minimizuju unakrsni kontakt alergena. Ako se npr. odvojeno proizvode proizvodi sa susamom, ora\u0161astim plodovima ili mle\u010dnim punjenjima, vizuelna identifikacija zaposlenih mo\u017ee pomo\u0107i da se lak\u0161e kontroli\u0161e ko radi u kojoj zoni ili na kojoj liniji.<\/p>\n\n\n\n<p>Va\u017eno je naglasiti da se alergeni ne kontroli\u0161u samo pranjem uniforme. Kontrola alergena po\u010dinje dizajnom procesa, odvojenim tokovima, pravilima kretanja, \u010di\u0161\u0107enjem, obukom zaposlenih i jasnim procedurama. U EU okviru, riblji proizvodi spadaju u hranu \u017eivotinjskog porekla za koju <a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/EN\/TXT\/PDF\/?uri=CELEX%3A32022R2258\" target=\"_blank\" rel=\"noreferrer noopener\">va\u017ee posebna higijenska pravila<\/a>. To potvr\u0111uje da se prerada ribe mora posmatrati kao sektor sa specifi\u010dnim higijenskim zahtevima, posebno zbog vlage, niskih temperatura, brzog kvarenja proizvoda i potrebe za kontrolom kontaminacije.<\/p>\n\n\n\n<p>U ovom sektoru radna ode\u0107a mora istovremeno da \u0161titi proizvod i zaposlenog. Zaposleni \u010desto rade u hladnom i mokrom okru\u017eenju, uz intenzivno pranje povr\u0161ina i opreme. U istom pogonu se mogu nalaziti meso, mle\u010dni sastojci, jaja, riba, gluten, soja, ora\u0161asti plodovi, povr\u0107e i gotovi proizvodi koji se vi\u0161e ne obra\u0111uju termi\u010dki pre konzumiranja.<\/p>\n\n\n\n<p>Zato je u ovom sektoru klju\u010dno razdvajanje sirovih i gotovih zona. Iako nisu evropske, <a href=\"https:\/\/www.fda.gov\/media\/102633\/download\" target=\"_blank\" rel=\"noreferrer noopener\">FDA smernice za kontrolu listerije (<em>Listeria monocytogenes<\/em>)<\/a> u gotovim jelima su veoma prakti\u010dne. Preporu\u010duju da se rukavice i obu\u0107a koje se koriste u RTE zonama koriste samo u tim zonama, a da se ode\u0107a ili mantili za RTE prostore razlikuju od onih koji se koriste u drugim delovima pogona, na primer kroz kolor kodiranje. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-evropske-uredbe-i-kontrola-listerije\">Evropske uredbe i kontrola listerije<\/h3>\n\n\n\n<p>I u EU regulativi, kontrola <em><a href=\"https:\/\/www.zdravlje.org.rs\/index.php\/aktuelne-vesti\/1117-listerioza\" target=\"_blank\" rel=\"noreferrer noopener\">Listeria monocytogenes<\/a><\/em> je veoma va\u017ena u kontekstu pripreme gotovih jela. Zbog toga se kod njih posebna pa\u017enja mora posvetiti razdvajanju sirovih, termi\u010dki obra\u0111enih i RTE zona, kontroli proizvodnog okru\u017eenja, opreme i povr\u0161ina, kao i pravilima kretanja zaposlenih izme\u0111u zona. Evropska komisija ima stranicu o <a href=\"https:\/\/food.ec.europa.eu\/food-safety\/biological-safety\/food-hygiene\/microbiological-criteria_en\" target=\"_blank\" rel=\"noreferrer noopener\">mikrobiolo\u0161kim kriterijumima<\/a> i <a href=\"https:\/\/zenodo.org\/records\/8406616\/files\/EURL_Lm_TGD_sampling%20processing%20areas_version4%202023-10-03.pdf?download=1\" target=\"_blank\" rel=\"noreferrer noopener\">EURL Lm smernicama<\/a> za monitoring listerije, kao i shelf-life studije. <a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/EN\/TXT\/PDF\/?uri=OJ%3AL_202402895\" target=\"_blank\" rel=\"noreferrer noopener\">Uredba 2024\/2895<\/a>, koja je zamenila Uredbu 2073\/2005, poo\u0161trila je kriterijume za Listeria monocytogenes u gotovoj hrani koja mo\u017ee podr\u017eati rast ove bakterije.<\/p>\n\n\n\n<p>Za proizvodnju gotovih jela posebno su va\u017eni:<\/p>\n\n\n\n<ul class=\"wp-block-list has-white-color has-turquoise-background-color has-text-color has-background has-link-color wp-elements-db457647dc2759d1faef3a82c4c382fd\">\n<li>jasno razdvajanje ode\u0107e za zonu sirove hrane, termi\u010dki obra\u0111ene hrane i RTE zonu<\/li>\n\n\n\n<li>posebne uniforme ili mantili za zone u kojima je gotov proizvod izlo\u017een<\/li>\n\n\n\n<li>dnevna zamena ili pranje ode\u0107e tamo gde procena rizika to zahteva<\/li>\n\n\n\n<li>obu\u0107a namenjena samo za odre\u0111enu zonu<\/li>\n\n\n\n<li>pravila za posetioce, odr\u017eavanje i sanitarne ekipe<\/li>\n\n\n\n<li>jasna procedura za ulazak i izlazak iz RTE zone<\/li>\n\n\n\n<li>obuka zaposlenih o alergenima i kretanju izme\u0111u zona<\/li>\n<\/ul>\n\n\n\n<p>Kod gotovih jela poseban problem je to \u0161to zaposleni \u010desto rade sa vi\u0161e komponenti u istom danu. Jedna linija mo\u017ee imati proizvod sa mlekom, druga sa ribom, tre\u0107a sa glutenom, \u010detvrta sa jajima. Ako ode\u0107a, rukavice ili kecelje prate zaposlenog kroz vi\u0161e procesa bez jasnih pravila zamene, pove\u0107ava se rizik od unakrsnog kontakta alergena i mikrobiolo\u0161ke kontaminacije.<\/p>\n\n\n\n<p>Zato radna ode\u0107a za gotova jela treba da bude povezana sa mapom toka proizvoda, mapom kretanja zaposlenih i pravilima za ulazak u higijenske zone.
