V\u00fdsledkem je zv\u00fd\u0161en\u00e9 riziko kontaminace, nepln\u011bn\u00ed norem (nap\u0159. HACCP) a sn\u00ed\u017een\u00e1 bezpe\u010dnost v\u00fdroby. \u0158e\u0161en\u00edm je profesion\u00e1ln\u00ed pron\u00e1jem pracovn\u00edch od\u011bv\u016f, kter\u00fd zajist\u00ed hygienu, udr\u017eitelnost, bezpe\u010dnost i spokojenost zam\u011bstnanc\u016f \u2013 a z\u00e1rove\u0148 sn\u00ed\u017e\u00ed provozn\u00ed i administrativn\u00ed z\u00e1t\u011b\u017e firmy.<\/strong><\/p>\n\n\n\n<p>V potravin\u00e1\u0159sk\u00fdch provozech jsou spr\u00e1vn\u011b <strong>udr\u017eovan\u00e9 a pou\u017e\u00edvan\u00e9 pracovn\u00ed<\/strong> <strong>od\u011bvy <\/strong>kl\u00ed\u010dov\u00e9 pro udr\u017een\u00ed vysok\u00e9 kvality v\u00fdrobk\u016f i pro zaji\u0161t\u011bn\u00ed bezpe\u010dnosti pr\u00e1ce. <strong>Jak to ale s pracovn\u00edmi od\u011bvy p\u0159i v\u00fdrob\u011b vypad\u00e1 v praxi?<\/strong> Kdo je zodpov\u011bdn\u00fd za p\u00e9\u010di o pracovn\u00ed od\u011bvy a jak jsou s n\u00ed zam\u011bstnanci spokojeni? Na tyto a dal\u0161\u00ed ot\u00e1zky n\u00e1m p\u0159inesl odpov\u011bdi exkluzivn\u00ed <a href=\"https:\/\/web.norstatsurveys.com\/apps\/dashboard\/selfserve\/53c\/24111210:view\/a6vrjnh0v59p#fn=dashboardConfig\/tab:0\" target=\"_blank\" rel=\"noreferrer noopener\">pr\u016fzkum agentury Norstat<\/a>.<\/p>\n\n\n\n<p><strong>V na\u0161em \u010dl\u00e1nku se zam\u011b\u0159ujeme na v\u00fdsledky z \u010cesk\u00e9 a Slovensk\u00e9 republiky, ale v r\u00e1mci pr\u016fzkumu agentury Norstat najdete i data ze v\u0161ech dal\u0161\u00edch zem\u00ed EU, kter\u00e9 se studie z\u00fa\u010dastnily.<\/strong> Kdy\u017e budete cht\u00edt, m\u016f\u017eete si snadno vyfiltrovat jednotliv\u00e9 zem\u011b a <strong>porovnat v\u00fdsledky mezi nimi<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pracovn\u00ed od\u011bvy pod drobnohledem<\/h2>\n\n\n\n<p>V Lindstr\u00f6m klademe d\u016fraz na pozitivn\u00ed z\u00e1kaznickou zku\u0161enost. V\u017edy naslouch\u00e1me skute\u010dn\u00fdm pot\u0159eb\u00e1m pracovn\u00edk\u016f, kte\u0159\u00ed na\u0161e od\u011bvy nos\u00ed. Rozhodli jsme se ale j\u00edt je\u0161t\u011b v\u00edce do hloubky. Rozpor mezi prax\u00ed a hygienick\u00fdmi normami<\/h2>\n\n\n\n<p>V\u00fdznamn\u00fdm zji\u0161t\u011bn\u00edm pr\u016fzkumu je, \u017ee <strong>ka\u017ed\u00fd p\u00e1t\u00fd zam\u011bstnanec (1 z 5)<\/strong> v potravin\u00e1\u0159stv\u00ed <strong>nen\u00ed obezn\u00e1men s \u017e\u00e1dn\u00fdmi hygienick\u00fdmi normami<\/strong>, kter\u00e9 by m\u011bl p\u0159i manipulaci s pracovn\u00edm od\u011bvem dodr\u017eovat.<\/p>\n\n\n\n<p>Tato <strong>n\u00edzk\u00e1 m\u00edra informovanosti<\/strong> v\u00fdrazn\u011b zvy\u0161uje riziko poru\u0161ov\u00e1n\u00ed p\u0159edpis\u016f, a to \u010dasto i ne\u00famysln\u011b.<\/p>\n\n\n\n<p>P\u0159esto\u017ee je pro v\u00fdrobu potravin nezbytn\u00e9 dodr\u017eovat p\u0159\u00edsn\u00e9 hygienick\u00e9 normy, p\u00e9\u010de o pracovn\u00ed od\u011bvy le\u017e\u00ed st\u00e1le z velk\u00e9 \u010d\u00e1sti na samotn\u00fdch zam\u011bstnanc\u00edch \u2013 dle na\u0161eho pr\u016fzkumu <strong>alarmuj\u00edc\u00edch 86 % pracovn\u00edk\u016f p\u0159iznalo, \u017ee si sv\u00e9 pracovn\u00ed oble\u010den\u00ed alespo\u0148 jednou vyprali sv\u00e9pomoc\u00ed doma.<\/strong><\/p>\n\n\n\n<p>Jako hlavn\u00ed d\u016fvod uv\u00e1d\u011bj\u00ed paradoxn\u011b hygienu. Respondenti, kte\u0159\u00ed si perou od\u011bvy doma, pou\u017e\u00edvaj\u00ed <strong>nej\u010dast\u011bji teplotu pod 70 \u00b0C (69 %)<\/strong>, co\u017e je naprosto nedosta\u010duj\u00edc\u00ed, a od\u011bvy v\u017edy <strong>vy\u017eehl\u00ed pouh\u00fdch 22 % pracovn\u00edk\u016f<\/strong>.<\/p>\n\n\n\n<p>P\u0159i pran\u00ed pod 70 \u00b0C, <strong>bez pou\u017eit\u00ed su\u0161i\u010dky nebo bez \u017eehlen\u00ed<\/strong> nedoch\u00e1z\u00ed k likvidaci mo\u017en\u00fdch vir\u016f nebo bakteri\u00ed zachycen\u00fdch v od\u011bvu. Tyto od\u011bvy v\u0161ak nemus\u00ed spl\u0148ovat \u2013 a v\u011bt\u0161inou ani nespl\u0148uj\u00ed \u2013 <strong>po\u017eadovan\u00e9 normy na bezpe\u010dnost a hygienu<\/strong>. Z pohledu hygieny a bezpe\u010dnosti jde o <strong>velk\u00fd rizikov\u00fd faktor<\/strong> hned z n\u011bkolika d\u016fvod\u016f:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Vlastn\u00ed pracovn\u00ed oble\u010den\u00ed \u010dasto <strong>nespl\u0148uje po\u017eadavky na hygienu<\/strong>, odolnost, barevn\u00e9 rozli\u0161en\u00ed nebo ochrann\u00e9 prvky. To zvy\u0161uje nejen riziko naru\u0161en\u00ed ochrann\u00fdch vlastnost\u00ed od\u011bv\u016f, ale tak\u00e9 p\u0159isp\u00edv\u00e1 ke zkr\u00e1cen\u00ed jejich \u017eivotnosti a k nespokojenosti zam\u011bstnanc\u016f.<\/p>\n\n\n\n<p>Mezi nej\u010dast\u011bji zmi\u0148ovan\u00e9 nedostatky pat\u0159\u00ed zejm\u00e9na <strong>n\u00edzk\u00e1 odolnost a trvanlivost materi\u00e1lu<\/strong> \u2013 <strong>na tu si st\u011b\u017eovalo 34 %<\/strong> zam\u011bstnanc\u016f. N\u00e1sleduje \u0161patn\u00e1 velikost \u010di st\u0159ih, co\u017e nejv\u00edce vad\u00ed 23 % zam\u011bstnanc\u016f.
